CHICKEN STIR-FRY
Ingredients:
Water
3 medium carrots
6 to 7 scallions (onions)
3 boneless, skinless chicken breast halves (about 1½ pounds total)
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
1 Tablespoon canola oil
2 Tablespoons low-sodium soy sauce
Optional: Any veggies you'd like
These measurements are for 4-5 servings
Instructions:
Boil a kettle of water.
Cut carrots into 3-inch-long batons. Cut white and light-green parts of scallions (onions)crosswise into thin slices.
Trim fat from chicken, then cut into 1-inch chunks. Pat dry with paper towels as needed, then evenly season with salt and pepper.
Heat oil in pan or large skillet over high heat. Swirl to coat.
Once oil is hot, add chicken. Stir-fry for about 6 minutes, until mostly cooked. Then transfer to a plate, and set to the side.
Add your carrots to your pan or skillet and stir-fry for about 3 minutes, until lightly softened. Add scallions ( onions ) and stir-fry for 1 minute. Carefully Pour in the soy sauce, then return chicken to pan or skillet. Cook for 2 minutes. Let it set for about 2-3 Minutes and then you are ready to serve.
Tips:
1) You can add as many different veggies you'd like.
(Example: Bell peppers, Tomatoes, some people even add potatoes, a really popular is broccoli) Just anything your taste buds desire:))
Have fun with it!
2) You can serve it with a side of steamed rice..or
Place the steamed rice onto the place and then serve the chicken stir-fry on top. (like the picture)
3) If you do not like soy sauce....
Yea it will change the flavor a bit but it will still be Delicious and healthy for you. Just add more salt ( if needed )to your desire taste.
